From the Pantry
1 pack or bundle of clear noodles
1/4 cup dried shrimp
1/2 sliced onion
1 cup chopped celery
3 Thai red chillies
1-2 limes
1/2 cup peanuts
4 to 5 sprigs of coriander
1 tablespoon fish sauce
1 tablespoon fried garlic
1/2 teaspoon sugar
Cook Away
Soak the noodles in boiling water for 5-7 minutes and strain them.
Toast the peanuts.
Fry the garlic. Keep aside.
Fry the shrimps till they turn white.
Finish chopping the onion, celery, chillies and cilantro.
Mix 1 tablespoon of fish sauce with 5 tablespoons of lime or lemon and the sugar.
Mix the noodles well with garlic and then the dressing.
Next, add the peanuts, shrimp, onion, celery, chillies, cilantro and toss well.
