From the Pantry
200g mushrooms
200g goat cheese
¾ cup whole wheat flour
4 eggs
2 cups milk
1 teaspoon baking powder
1 tablespoon butter
2 teaspoons fresh rosemary, chopped
salt & pepper
Cook Away
Preheat the oven to gas mark 4 or 180 C.
Use a bit of butter to grease the muffin tray.
Crumble the cheese and put aside.
Saute the mushrooms in butter over a medium flame.
Add a teaspoon of rosemary and a pinch of salt.
Stir for 4-5 minutes.
Whisk the milk and eggs together adding salt and pepper to taste.
Add in the flour, baking powder and goat cheese to the mix.
Finally add the mushrooms and mix well.
Put the batter in the tray and sprinkle with remaining rosemary.
Bake for 30 minutes till the quiches begin to brown.
